Beef Fried Rice

I meant to post this last night, but I had the, recently rare, chance to see a movie with a good friend, and I really needed the distraction, the girl talk and the soda!! So, I took the chance and didn't look back!!! But, yes - sorry... that means you didn't get a new recipe until today. Forgive me?! :0)

Beef Fried Rice



Ingredients:
1 1/2 cup soy sauce
1 tsp rice wine vinegar
1 tsp cooking Sherry
1/2 tsp sesame oil
2 Tbsp honey
2 Tbsp brown sugar
1 Tbsp minced garlic
1 tsp crushed red pepper flakes
1 lb beef, cut into 1/2" cubes
1 bunch green onions, whites and greens sliced thinly and separated
3 Tbsp vegetable oil
4 cups cooked rice, chilled
2 eggs, lightly beaten
Other vegetables, cut to manageable size

Directions:
Cook rice as directed on package, refrigerate at least 3 hours, can be overnight.

Make sauce for meat by combining soy sauce, rice wine vinegar, sherry, sesame oil, honey, brown sugar, garlic and red pepper flakes. Mix well.



Cut beef into 1/2" cubes and place in marinade. Top sirloin works best. Marinate beef at least 20 minutes, but you can also marinate overnight.



Heat 1 Tbsp oil over medium-high heat. Add whites of onion and you can also add additional red pepper flakes if you like the heat, we do! Stir fry until flavors release and onions are softened.



Strain meat from marinade and stir fry meat with onion. Set marinade aside. Cook beef 2-3 minutes.



Add any vegetables you would like to add now.



Continue to stir fry 3-4 minutes. Remove beef, onion, vegetables and any juices from pan.

Heat remaining 2 Tbsp oil. Add cooled/cold rice to pan. Stir fry until rice is coated. Push rice to back of pan, add beaten eggs to empty space.



Scramble eggs, then mix into rice and continue to fry 1-2 minutes. Add marinade from beef and cook 2 minutes.



Strain beef and vegetables from juices and mix into rice. Add green of onion, toss and serve.



So yummy!!

The pictures show our dinner from last night, I only used zucchini. I intended to put carrot in there, but I thought we had some and therefore, didn't buy them at the store! :/ You can add peas, cabbage, bean sprouts... anything!!

This recipe is very versatile, you can alter the sweetness, the veggies, almost everything! Get creative and make it to suit the tastes of your family.
